Cream Cheese Cookies


Ingredients for the cookies
  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder (not Dutch-process)
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon coarse salt
  • 1 tablespoon unsalted butter, softened
  • 1/4 cup vegetable shortening
  • 1/2 cup granulated sugar
  • 1/2 cup packed dark-brown sugar
  • 1 large egg
  • 1 cup whole milk
  • 1 teaspoon pure vanilla extract 

Ingredientes para las galletas
  • 225g de harina
  • 85g de cacao en polvo sin endulzar (sin proceso holandés)
  • 10g de Bicarbonato
  • 2,5g de sal
  • 15g de mantequilla suave sin sal
  • 55g de margarina
  • 115g de azúcar
  • 100g de azúcar moreno
  • 1 huevo grande
  • 250ml de leche entera
  • 5ml de extracto puro de vainilla

Ingredients for the filling
  • 4 ounces cream cheese, at room temperature
  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 1/2 cup confectioners' sugar
  • 1/4 cup canned solid pack pumpkin
  • Pinch of cinnamon
  • Pinch of nutmeg

Ingredientes para el relleno
  • 113g de crema de queso (temperatura natural)
  • 115g de mantequilla sin sal (temperatura natural)
  • 60g de azúcar de repostería
  • 30g de relleno de calabaza para tartas
  • 1 pizca de canela
  • 1 pizca de nuez moscada


Directions




  1. Prepare cookies: Preheat oven to 375 degrees. Sift together flour, cocoa powder, baking soda, and salt into a medium bowl; set aside.
  2. Place butter, shortening, and sugars into the bowl of an electric mixer fitted with the paddle attachment. Mix on high speed until smooth, about 3 minutes. Add egg; mix until pale and fluffy, about 2 minutes. Mix in half the flour mixture, then the milk and vanilla. Mix in remaining flour mixture.
  3. Drop about 2 teaspoons dough onto baking sheets lined with parchment paper, spacing 2 inches apart. Bake until cookies spring back when lightly touched, 12 to 14 minutes. Transfer baking sheets to wire racks and let cool 10 minutes. Remove cookies from baking sheets and transfer to wire racks using a spatula; let cool completely.
  4. Prepare filling: In the bowl of a mixer fitted with the paddle attachment, whip together cream cheese, butter, and confectioners' sugar on medium speed until smooth, about 3 minutes. Add pumpkin, cinnamon, and nutmeg; whip until smooth, scraping down the bowl as necessary.
  5. Pipe or spoon about 2 teaspoons filling on the flat sides of half the cookies. Sandwich with remaining cookies, keeping the flat sides down.

Directions
  1. Preparar las galletas: precalentar el horno a 190ºC. Mezclar la harina, el cacao en polvo, el bicarbonato y la sal en un bold mediano; dejar a un lado.
  2. Batir la mantequilla, la margarina, el azúcar y el azúcar moreno a velocidad alta hasta conseguir una textura suave (alrededor de 3 minutos). Añadir el huevo y batir hasta que la textura sea esponjosa y de un color claro. Añadir la mitad de la mezcla de la harina y, seguidamente, la leche y la vainilla. Añadir la cantidad restante de la mezcla de la harina.
  3. Colocar unos 10g de masa en papel de hornear dejando 5cm de espacio. Hornear hasta que las galletas se volteen al tocarlas suavemente. Retirar las galletas del papel de hornear y colocarlas en una rejilla para dejarlas enfriarse completamente.
  4. Preparar el relleno: mezclar en un bol el queso en crema, la mantequilla y el azucar de repostería y batir suavemente alrededor de 3 minutos hasta conseguir una textura suave. Añadir la calabaza, la canela y la nuez moscada. Remover hasta conseguir una mezcla suave.
  5. Rellena usando una manga pastelera o una cuchara aplicando unos 10g de masa en la parte plana de una galleta y cerrando con otra como si fuera un sandwich.

Pumpkin-Swirl Brownies


Having the biggest sweet tooth, I love to wear an apron and cooking tasty and fluffy desserts that melts in your mouth... Wanting to take advantage of the fall season, I looked up quite a few Pumpkin recipes and I found many good ideas. So I didn't want to take so long to put them into practice.

Siendo golosa como soy, me encanta ponerme el delantal y preparar unos buenos dulces, sobre todo si son suaves y esponjosos y que se deshagan en la boca... Y aprovechando la temporada otoñal, busqué unas cuantas recetas con calabaza y me encontré con muy buenas ideas que no he querido tardar en poner en práctica.


Ingredients:
  • 8 tablespoons (1 stick) unsalted butter, plus more for pan
  • 6 ounces bittersweet chocolate, chopped
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1 3/4 cups sugar
  • 4 large eggs
  • 1 tablespoon pure vanilla extract
  • 1 1/4 cups solid-pack pumpkin
  • 1/4 cup vegetable oil
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup chopped hazelnuts or other nuts

Ingredientes:
  • 200g de mantequilla sin sal
  • 170g de chocolate amargo picado
  • 250g de harina
  • 5g de levadura
  • 1,25g de cayena
  • 2,5g de sal
  • 350g de azúcar
  • 4 large eggs
  • 15ml de extracto puro de vainilla
  • 150g de relleno de calabaza para tartas
  • 55g de margarina vegetal o 55ml de aceite
  • 5g de canela en polvo
  • 5g de nuez moscada
  • 90g de avellanas troceadas (u otro fruto seco a elección)

Directions:







  1. Preheat oven to 350 degrees. Butter a 9-inch square baking pan or dish. Line bottom of pan with parchment paper; butter lining.
  2. Melt chocolate and butter in a heatproof bowl set over a pan of simmering water, stirring occasionally until smooth.
  3. Whisk together flour, baking powder, cayenne, and salt in a large bowl; set aside. Put sugar, eggs, and vanilla in the bowl of an electric mixer fitted with the paddle attachment; beat until fluffy and well combined, 3 to 5 minutes. Beat in flour mixture.
  4. Divide batter between two medium bowls (about 2 cups per bowl). Stir chocolate mixture into one bowl. In other bowl, stir in pumpkin, oil, cinnamon, and nutmeg. Transfer half of chocolate batter to prepared pan smoothing top with a rubber spatula. Top with half of pumpkin batter. Repeat to make one more chocolate layer and one more pumpkin layer. Work quickly so batters don't set.
  5. With a small spatula or a table knife, gently swirl the two batters to create a marbled effect. Sprinkle with nuts.
  6. Bake until set, 40 to 45 minutes. Let cool in pan on a wire rack. Cut into 16 squares.

Elaboración:






  1. Precalentar el horno a 175ºC. Untar con mantequilla un molde cuadrado de 22cm de longitud. Cubre el fondo del molde con papel de horno y cubrir con mantequilla.
  2. Derrite el chocolate y la mantequilla al baño maría, removiendo ocasionalmente hasta que quede una textura suave.
  3. Mezcla la harina, la levadura, la cayena y la sal en un bol grande; apartar. Mezcla el azúcar, los huevos y la vainilla en un bol y batir hasta que la mezcla quede una masa homogénea (entre 3 y 5 minutos). Añadir la mezcla de harina y batir.
  4. Divide la masa a partes iguales en dos boles medianos y añade la mezcla de chocolate en uno de los boles. En el otro bol añade la calabaza, el aceite (o margarina), la canela y la nuez moscada. Vierte la mitad de la masa de chocolate en el molde y alisa con una espátula. Cubre la masa con la mitad de la masa de calabaza. Repetir para cubrir con una capa más de chocolate y otra de calabaza. Trabaja rápido para que las masas no se asienten.
  5. Con una espátula pequeña o con un cuchillo, remueve suamevente en esperial para crear el efecto marmoleado. Rocia el molde con las avellanas.
  6. Hornear hasta que cuaje, entre 40 y 45 minutos. Dejar enfriar en el molde sobre una rejilla. Cortar en 16 cuadrados.
